They are steamed or boiled and usually eaten as an appetizer or snack.

You’ll find them in Japanese and Asian restaurants where they are usually served salted and at room temperature. Typically, you eat the beans inside and discard the pods. Check your grocery or specialty foods store – they can sometimes be found in the frozen foods aisle.

In Chinese, young soybeans in the pod are known as maodoujia which literally translates as “hairy bean pod.” No matter what you call them, they are a specific species of soybean grown for early harvesting and are different than soybean crops grown specifically for their mature beans.

Cook them by steaming or boiling for 3 to 5 minutes. Don’t overcook – you don’t want a bunch of mush.

We are used to seeing edamame served salted at Japanese restaurants but edamame without salt is equally delicious.

Edamame calories are high in protein, fiber and potassium.
Edamame Top 10

10. “Healthy” is the first word that should come to mind with edamame – they are a low-fat, low-cholesterol, and high-protein food. What more can you ask for: easy preparation, super taste and high nutrition value?

Grow Your Own

Growing your own healthy low-calorie edamame is easy. Here is one person’s discussion of growing soy bean plants in flower pots on their deck. Of interesting note in this blog post: soybeans have small root systems and thus you can plant them close together – in 2 inch spacings. They put six plants in a large flower pot – lots of beautiful foliage and lots of edamame pods!

If you often find yourself in coveralls driving a tractor, then you will find the USDA page on growing edamame as a row crop more informative.

Finally, you will find this article at the National Garden Bureau web site to be most informative: history, seed varieties, growing and harvesting are all covered.

Tootsie Rolls were invented in 1896 not long after Austrian-born Leo Hirshfield opened a tiny candy shop in New York City. Taking full advantage of his confectioner’s background, Hirshfield personally blended, cooked, and peddled a variety of products, including an individually wrapped, oblong, chewy, chocolate candies that quickly became a customer favorite. Sold at a penny apiece and affectionately named after Hirshfield’s five-year old daughter, Clara, whose nickname was “Tootsie,” Tootsie Rolls propelled Hirshfield’s modest corner store into a burgeoning candy enterprise that has evolved in little more than a century into the multinational corporation, Tootsie Roll Industries.

The Toosie Roll Industries Web Site

Promotions: When we reviewed http://tootsie.com, we found a contest to win $50,000 if you can guess the number of licks it takes the average person to get to the center of a Tootsie Pop. There is no purchase necessary and you can enter here: http://www.tootsie.com/promotions.php

The Tootsie Store: Yes, you can buy clothing, jewelry, pillows, gift certificates and more online. Hmmm, a Tootsie Roll salt and pepper shaker set?

Factory Tour: Their web site has 9 videos showing how their candy is made, plus a video discussing THE important question: How many licks does it take to get the center of a Tootsie Pop? Important, yes, but after 20 or more years discussing this, I think they need a new marketing campaign.

Ringtones: Ok, this is where it is at. I don’t even have a cell phone, but if I did, Tootsie Pop #4 would be my ringtone. What? No Tootsie ROLL ringtones?

Video/Commercials: The Tootsie web site has a good selection of vintage commercials and video clips. Groovy stuff. One gets the impression that their advertising has not changed much in the past few decades.

The Sweet Taste of Success?

Save a little money back after buying that bag of Tootsie Rolls – maybe you would like to buy a few shares of their stock. Yes, they are a publicly traded stock on the New York Stock Exchange where they are known as “TR.” When we wrote this article in late July 2009, the stock was trading around $25 per share.

(ARA) – Providing a family with nutritious, well-balanced meals is hard enough for busy consumers, but in today’s changing economy, affordability is also a factor. While it may seem like the cost of everything from gas to groceries is on the rise, the good news is that you can feed your entire family organic and natural foods at a lower cost without having to make an extra trip to a specialty health food store. Now you can find a variety of organic and natural products at your local supermarket, for a lot less than you might expect.

Many grocery shoppers are seeking ways to lead healthier lifestyles but also want foods that offer value, selection and convenience. Research shows that they prefer organic and natural foods — the demand for these foods has grown 10 to 15 percent annually over the past 15 years as shoppers have become more mindful of the ingredients in foods they buy.

The increase in demand for organic and natural foods is partly attributed to parents who see the value in feeding their families food that is free of artificial colors, flavors and preservatives. Others eat organic and natural foods because they believe they taste better since they have not come in contact with pesticides.

Eat well, live well
The secret to eating well and living well can be as simple as choosing organic and natural foods from the wide array of privately branded supermarket foods. These store brands are often as good or better quality than their national brand counterparts, and are priced lower. And, because of recent demand, shoppers can now expect to find all their favorite foods in an organic or natural variety.

For example, the Wild Harvest brand of organic and natural foods, available nationally at SUPERVALU stores including Acme, Albertsons, Jewel-Osco, Cub Foods, Shaw’s and others, offers 250 organic and natural products, all priced at approximately 15 percent lower than national-brand organic and natural foods.

Products include mealtime staples like milk, eggs, meat and fresh produce, and other foods like pastas, sauces, cookies, crackers, cereal and juice. Recently the Wild Harvest brand expanded to include more family favorites, including pizza, kids’ juice pouches, ready-to-drink tea, fresh herbs, artisan bread and muffins and organic baby food.

Food experts have long known the appeal of fresh and organic foods. Among them is Chef Bill Telepan of New York City’s highly acclaimed Telepan restaurant and author of the cookbook, “Inspired by Ingredients.” Telepan has been using fresh, natural and organic foods for more than 15 years, cooking for his family and customers alike. “Today’s families, like my own, want affordable, natural and delicious foods — I feel the impact of this trend through the requests I receive from customers for these types of foods in my restaurant. Wild Harvest organic foods address the need for a good selection of fresh and healthy foods that are convenient and a good value,” says Telepan.

Defining “organic” and “natural”
It’s important to check labels as you grocery shop for healthy and nutritious foods. When foods are labeled “organic” it means they were produced by avoiding exposure to potentially harmful additives such as chemical pesticides, fertilizers and preservatives, which are also environmentally harmful as they can end up in the ground, air, water or food supply. Shoppers concerned about these additives can read ingredient statements and avoid products containing unpronounceable ingredients, as well as look for the U.S. Department of Agriculture organic seal on packaging. Products that are labeled “100 percent organic” contain only organically grown ingredients.

When a product is labeled “natural” it means that the food or the ingredients in the product have been minimally processed, contain no chemical or artificial ingredients, and remain as close as possible to their original and natural state.

Five easy tips for “going organic”
With today’s supermarket products, it’s easy to incorporate wholesome and nutritious organic foods into your family’s daily diet:
1. Tuck organic juice pouches, organic applesauce cups and organic animal crackers into the kids’ backpacks.
2. Serve organic pizza at your teen’s slumber party or after sports events.
3. Set the table with a healthy breakfast assortment: cage-free eggs, Wild Harvest Banana Walnut Granola, organic yogurt and vibrant fresh berries.
4. Marinate all-natural chicken breasts using bottled organic marinade. Choose an interesting flavor, such as roasted garlic balsamic vinaigrette.
5. Give your baby a nutritional head start with organic baby foods.

With the variety of choices available at today’s supermarkets, one-stop shopping for affordable organic and natural foods is now a reality.

Falling food costs and a prolonged recession may tempt restaurant chains into a wave of discounts next year, leaving potential profits on the table.

With prices for many food items and fuel hitting record highs this summer, restaurants were forced to raise the prices of their dishes beyond historical norms, producing a bitter proposition for customers watching the values of their homes and investment portfolios shrink.

Now, with food inflation expected to ease next year and the price of oil already in freefall, analysts will be watching whether restaurants can hold onto those price gains taken in recent years and allow the benefit of falling food costs to trickle down to the bottom line.

It may be tough to do, however. In the deep downturns in the early 1980s and 1990s, restaurants used falling food prices to slash menu prices to help consumers open their wallets, according to Morgan Stanley restaurant analyst John Glass. The dynamic didn’t play out in 2001 since the economic dip was not as long-lasting.

“When food costs fall and demand for food falls, restaurants typically use it as an opportunity to discount,” Glass said during a recent conference call.

Discounts, combo meals and value menus have become top of mind among restaurant executives in recent months as chains grapple with how to convince diners with less disposable income and more options from supermarkets to come to their tables. At times of higher ingredient costs such deals squeezed margins, but as food costs come down, selling items at lower prices won’t eat into profits as much.

And now, sticker shock at the grocery store?

Shoppers who note rising prices at the grocery store are not alone. The U. S. Department of Labor’s Bureau of Labor Statistics reported that, over the last two years, food prices have risen faster than at any time since 1990. In 2007, prices for all food purchased in the U.S. increased 4.0 percent — up from a 2.4 percent increase in 2006, a Kansas State University specialist said.

While the Bureau reports that Americans typically spend about 10 percent of their after-tax income on food, low-income families are not faring as well, said Mary Meck Higgins, a registered dietitian and Kansas State University Research and Extension nutrition specialist.

A 2005 Consumer Expenditure Survey indicated that households earning from $10,000 to $14,999 (before taxes) spent an average of 25 percent on food; households earning $15,000 to $19,999 (before taxes) spent 19 percent on food, Higgins said.

Retailers who combine food, general merchandise and value have been surviving the recession better than most, but even Wal-Mart and Costco haven’t been as creatively aggressive in using that formula to promote their stores as has Grand Rapids, Mich., based Meijer.

With stores in Michigan, Ohio, Indiana, Illinois and Kentucky, Meijer has recently benefited from trouble at Sears Holding, which reduced the threat from Sears and Kmart. But it has been getting socked by the expansion of Wal-Mart and Target in the markets where it operates. In response, Meijer has become more food oriented, expanding service and gourmet operations as it builds in better apparel, housewares, electronics, pet products and sporting goods. Even when introducing fancier products, though, it promotes value — for example, placing wine near the prepared dinners it displays to offer a less expensive but elegant alternative to eating out.

More pointedly, Meijer has taking pains to convince customers that it understands when and where they need a break. For instance, as gas prices marched upward over the past couple of years, the retailer introduced a service that notified customers by cell phone shortly before it increased fuel prices at its store-run pumps in an effort to address the gas price concerns of customers in the drive-everywhere Midwest. Also, as drug chains, discounters and supermarkets lowered prices on generic prescription drugs, Meijer decided to provide the antibiotics most often prescribed for children free of charge, an initiative it positioned as a service to families pressed by increasing medical costs and bigger insurance contributions.

Now word comes that Meijer is providing a twist on a typical holiday promotion. As the season culminates, it is offering shoppers five-percent-off coupons for their next grocery purchase when they spend $100 on general merchandise, including apparel and housewares. Shoppers who spend enough can get up to four coupons in any single trip, then combine them for a maximum 20 percent savings on their next visit. Checkouts have been churning out the coupons since the program began on Nov. 30, said Meijer spokesman Frank Guglielmi, and will continue to do so as the late holiday shopping period peaks on Dec. 24. Consumers can redeem the coupons through Dec. 31.

Grocery stores, like consumers’ food budgets, are shrinking.

This month Wal-Mart Stores Inc. opened four pilot Marketplace stores in Arizona that are half the size of a traditional supermarket.

Supervalu-owned Jewel-Osco is testing its own small-format store in Chicago known as Urban Fresh. Safeway is trying its version in Southern California. And Whole Foods has said it is scaling down the size of its new stores.

The format has worked for some companies, such as Trader Joe’s, for years. But the idea is spreading as grocers are coping with rising costs and limited capital and find themselves pressed to find more profitable formats. It’s part of increasing competition with existing small stores and British company Tesco PLC, which launched its first small Fresh & Easy store about a year ago and now has nearly 100 around the West.

Following the official announcement by the National Bureau of Economic Research that the U.S. is in a recession, West Coast poultry producer Foster Farms today released new survey findings examining how the economy is impacting consumer lives, from grocery shopping and meal preparation to holiday giving plans.

The survey findings indicate that West Coast consumers have been heavily impacted by the recession and that they have already adapted their shopping and cooking habits to increase savings. At the same time, these households see a silver lining in their ability to control grocery shopping and food preparation costs more than other areas of daily life (such as commuting, housing, etc.). The findings also suggest that consumers are moving away from viewing food as entertainment and are eating healthier by going back to basics. Highlights include:

– West Coast families have been hit hard by the economy with one in four respondents having been personally affected by job loss or foreclosure and 40% of respondents knowing two to five people who have been similarly affected.
– The majority (54.7%) of consumers surveyed said grocery shopping has become more difficult compared to last year.
– 22% of West Coast consumers are having difficulty or can no longer afford to feed their family the way they liked due to the cost of groceries.
– Despite the poor economy and rising food prices, 78% of consumers said that grocery shopping is something that they feel they can control, versus other economic factors.
– 78.5% of those surveyed said they are now shopping smarter and feel a sense of accomplishment when they save. 35.6% said their family is eating healthier in this economy.
– 64.1% of respondents said they are eating at home at least one more night a week instead of going out.
– 87.6% of respondents agree that family meals provide a source of comfort.
– Despite the economy, most families (70.3%) will enjoy the same meals they always have over the holidays, without sacrificing quantity or the quality of foods prepared.

Dominick Lombardi gave the Harmons cashier a crisp $100 bill Friday morning and walked away with a gift card of the same value for the grocery store.

It’s a Christmas gift for his mother-in-law, said Lombardi, a Bountiful resident. “My mother-in-law takes care of plenty of kids and grandkids, and this is the best gift for her,” he said.

Usually, Lombardi and his wife buy her jewelry for Christmas and would never think of buying a card for groceries. “She’s a good shopper,” and she can always find deals, Lombardi said, but with rising food prices, stretching the dollar is harder than ever.

“In this day and age, with the economy the way it is, the thing you have to do is take care of food and gas,” Lombardi said. “Everything else is extra.”

The tables sit pristine, linens immaculate. The wine bottles are uncorked, the glasses bereft of fingerprints. In the back, the ovens are scorching in the kitchen.

But the customers – where are they?

“I look around: There’s nobody here,” said Michael Elpidoforos, owner/chef at Zabaglione, whose Italian dishes fetch an average of $24. “I’m ready to lock the door.”

In a time of perilous 401(k)s, a faltering stock market, and shaky job security, fine dining out, it seems, has been left to simmer on the back burner.
