Rhubarb Pico de Gallo


Preparation Time: 10 minutes
Number of Servings: 8
Cups of Fruits and Vegetables Per Person: 0.50

Ingredients:

1 cup diced rhubarb
1 cup diced tomatoes
1/2 tsp salt
1 cup diced white onions
1-1/4 cup chopped cilantro
juice of 1/2 lime

Directions:

Combine all ingredients in a bowl and mix together. Refrigerate. Serve cold.
