Okra with Rice and Beans


Preparation Time: 30 minutes
Number of Servings: 2
Cups of Fruits and Vegetables Per Person: 1.50

Ingredients:

1/2 cup chopped onions
2 cups chopped tomatoes
1 tsp sesame oil
1 cup sliced okra
2 cloves garlic, chopped
1/2 cup vegetable low-sodium vegetable broth
2 cups cooked brown rice
1 cup black beans, canned

Directions:

In a medium size saucepan, sauté the onions and tomatoes in the oil for 5 minutes. Add the okra, garlic, and broth. Cook for 15 to 20 minutes. Serve hot over the rice and beans.
