Black Bean Gazpacho

Cups of Fruits and Vegetables Per Person: 2.00

Ingredients:

2 large tomatoes, seeded and chopped
1 large red bell pepper, chopped
1 large green bell pepper, chopped
1 medium cucumber, peeled and chopped
2 celery stalk, thinly sliced
1/4 cup sliced green onions
3 cups no added salt tomato juice
2 Tbsp lime juice
2 Tbsp red wine vinegar
2 tsp Tabasco sauce
1/2 tsp low sodium Worcestershire sauce
1 garlic clove, minced
2 15oz cans low sodium black beans, rinsed and drained
1/4 cup fat free sour cream

Directions:

Mix all ingredients except for sour cream in a large bowl. Cover and refrigerate for at least 6 hours, stirring occasionally. Serve with sour cream.
